Tequila Lime Flank Steak Fajita Salad with Chile Lime Vinaigrette ...

I think I found a salad that I can eat everyday.

I mean, besides that snickers apple salad that is made with? yep, snickers and apples and whipped cream and chocolate. Now THAT is a salad. Am I right or am I right?

I?m right.

But this salad is like, a normal salad that I can eat everyday. It takes a little more work than simply throwing a bunch of stuff together but it is totally worth it. It has layers upon layers of flavor. And texture! AHHHHH texture. The reason for my existence. I?m a texture faaaahreak.

The only things I love more than texture in my food are out-of-the-blue shoe sales and old school Lisa Loeb songs. Wait, I said songs with an ?s.? Pretty sure I should just say song-ah. No s. That?s right. I only hear what I want to.

In my perfect world, I would eat a big salad just like this for lunch everyday. However, in my perfect world I would also live in an adorable little condo and split my time between the big city and the little lake town and be able to properly wear skinny jeans and actually want to drink cappuccinos everyday with incredible foam art swirled on top.

The consensus of my life? I?ve read way too many books. I?m pretty sure that might be one of the issues of all females in this generation today. Probably why my expectations for work, life, love and? heck, even food? are so outrageous and obnoxious.

Instead, my perfect world consists of eating tortilla chips microwaved with cheese on top for lunch. That is not chick lit worthy. Sort of depressing. But real life! Luckily, real life sometimes inspires lunch so microwaved tortilla chips become fajita steak salads.

Because I will jump at any chance to consume a margarita for lunch? Also? true.

So yeah, this real life, microwave chip inspired salad has just about everything on top that your little heart may desire. Or my little heart. I don?t do many vegetables so? you may want to change that. But. We?ve got tequila marinated flank steak, black beans, some sweet corn salsa with jalape?os, lime and red onion, saut?ed peppers, grated cheese, tortilla chips and dun dun dun? avocado. Such a shocker. The whole thing is topped off with this chile lime dressing that I threw together on a whim and of course, immediately touched my eyes after dealing with the pepper flakes and jalape?os. That was so awesome.

Definitely made up for that with a marg.

Tequila Lime Flank Steak Fajita Salad with Chile Lime Vinaigrette

Yield: serves 2-4

Prep Time: 2-24 hours (marinating time)

Cook Time: 15 minutes

Ingredients:

tequila lime flank steak
1 (2 pound, 1-inch thick) flank steak
1/3 cup tequila
1/4 cup olive oil
1/4 cup lime juice
1/2 teaspoon salt
1/2 teaspoon pepper
zest of 2 limes

1/2 red pepper, thinly sliced
1/2 green pepper, thinly sliced
1 tablespoon olive oil
1 head of red romaine lettuce, washed, dried and torn
1/2 cup black beans
1/2 cup copycat chipotle corn salsa
1 ounce colby jack cheese, freshly grated
1 avocado, sliced
blue tortilla chips for topping

chile lime vinaigrette
2 tablespoons olive oil
1 tablespoons rice vinegar
1/2 tablespoon red pepper or chile oil
2 teaspoons honey
the juice of 2 limes
a pinch of salt + pepper

Directions:

Whisk tequila, olive oil, lime juice, salt, pepper and lime zest in a bowl until combine. Add flank steak to a ziplock bag or baking dish and pour marinade ingredients over top. Marinate (in the fridge!) for 2-24 hours, flipping steak a few times. When you're ready to make the salads, heat the broiler in your oven on the highest setting and place an oven rack directly underneath. Broil steak for 5 minutes, flip and broil for 5 minutes more. If your steak is 1-1 1/2 inches thick, this will result in steak that is done medium-well. Let it rest for 5-10 minutes, then slice thin strips on an angle. You can cook the steak however you'd like! You can grill the steak if desired.

While the steak is cooking/resting, heat a skillet over medium heat and add olive oil. Add peppers with a pinch of salt and pepper, tossing to coat and cook for 5-6 minutes, until slightly soft.

To assemble the salad, place lettuce in the bowl with a pinch of salt and pepper, toss, and cover with flank steak, black beans, corn salsa, peppers, cheese, avocado and tortilla chips. Top with dressing and toss!

Combine all ingredients in a mason jar, shaker bottle or large bowl and shake/whisk until combined.

The U.S. space agency's first launch of 2013, the new?Tracking and Data Relay Satellite K?(TDRS-K for short) soared spaceward atop a United Launch Alliance Atlas 5 rocket from Cape Canaveral Air Force Station in Florida at 8:48 p.m. EST (0148 Jan. 31 GMT).

"We have a customer that's quite thrilled right now to have a healthy satellite on orbit," Tim Dunn the TDRS-K flight director said in a NASA TV interview after the launch.

The TDRS-K satellite is bound for an orbit 22,300 miles (35,888 kilometers) above Earth, where it will join a constellation of five other satellites currently in orbit to help NASA and other space agencies stay in touch with orbiting spacecraft.

NASA's TDRS communications network began in 1983 and has not received an upgrade since 2002, when the space agency launched its 10th TDRS satellite. Five satellites are currently in use today, with the TDRS-K launch adding one more that number, mission managers said. [Launch Photos: NASA's TDRS-K Satellite Blasts Off]

The TDRS-K satellite is expected to spend at least 15 years, but agency officials expect that the satellite will exceed its projected life-expectancy. Many of the network's satellites have?outlived their expected mission lifetimes, ?said Jeffrey Gramling, NASA's TDRS project manager.

But that does not mean that TDRS-K is unnecessary. One of the satellites currently in active service is slated be retired in the next few months, and other satellites in the aging network are getting older, said Badri Younes, a scientist in NASA's Space Communications and Navigation office.

The satellite launched today was the first of three new satellites expected to enter service between now and 2015 that should further bolster the network. The TDRS-K mission costs between $350 million and $400 million, not including the price of its rocket.

The TDRS-K satellite is 26 feet long (8 meters) and weighs about 7,615 pounds (3,454 kilograms). It was expected to separate from its Atlas 5 rocket one hour and 46 minutes after liftoff, with a Centaur upper stage rocket engine slated to carry it the rest of the way to its geosynchronous orbit.

The satellite is expected to deploy its solar arrays and giant antennas about 11 days after launch, according to a mission description. ?

NASA's TDRS satellite network?is part of the larger "Space Network" used keep space agencies on the ground in constant communication with orbiting spacecraft. The International Space Station sends all of its data and messages through the network using the TDRS satellites. The rocket that sent TDRS-K into orbit even uses the space network to beam down data, Vernon Thorp, a program manager with NASA said.

TDRS-K is now entering into a three month period of testing and calibrations, but once those tests are complete the NASA research team will decide if the satellite is ready for service.?

Illinois Bars Already Profiting From Video Gambling ? CBS St. Louis

KEYESPORT, Ill. (AP) - Some Illinois bar owners say they?re already making big profits from video gambling machines that became legal late last year, and pending applications are expected to put even more money in their pockets.

Bob Waddell owns a bar outside Keyesport in Clinton County in southwestern Illinois. He made $9,778 in video gambling in December, according to a report in the Belleville News-Democrat.

?I have not been disappointed with the results,? he told the newspaper.

Players fed more than $1 million into machines operating in 35 establishments located east of St. Louis in December. These players lost $350,000 that month. Statewide, players lost nearly $7 million in December, while establishments kept $2.45 million, the state earned $1.75 million and cities and counties combined made about $350,000.

Video gambling became legal in bars, clubs and truck stops in October. While it?s early to tell how the profits will help the state?s dire financial problems, early numbers have shown it?s been a popular idea. Many applications are pending, including 251 in southwestern Illinois.

Lawmakers have talked of reviving a gambling expansion, including a casino in Chicago. Gov. Pat Quinn vetoed expansion legislation last summer citing ethical and oversight safeguards, but has since said he?s open to compromising.

State law provides how video gambling profits must be divided. The establishments get 35 percent, the vendors supplying the machines get 35 percent, the state gets 25 percent, and the 5 percent left goes to the municipality or county that authorized the liquor license to the bar.

All stakeholders may see their revenue increase soon after the Illinois Gaming Board licensed dozens more bars two weeks ago. Each establishment can have up to five machines.

But the staggering profits aren?t making everyone happy. Anita Bedell, the director of the Illinois Church Action on Alcohol and Addiction Problems, said the communities will gain ?very little? out of people?s loses.

?We?ve got a truck stop outside Springfield where last month people lost over $82,000,? Bedell said. ?It?s a big windfall for some of these bars.?

The state?s annual revenue from video gambling has been broadly estimated. It ranges from $106 million to about $534 million. The low estimates are based on Cook County?s ban on the machines.

North Korea threatens US over rocket launches

SEOUL, South Korea (AP) ? North Korea is threatening to retaliate for what it calls U.S. double standards over recent rocket launches by Pyongyang and U.S. ally Seoul.

A North Korean Foreign Ministry spokesman did not elaborate on what that might entail in his comments Saturday to the official Korean Central News Agency. But Pyongyang has recently threatened to conduct its third nuclear test in response to what it calls U.S. hostility.

Washington says Seoul's rocket launch Wednesday had no military intent while Pyongyang's in December was a test of banned ballistic missile technology.

The U.N. Security Council has imposed new sanctions on Pyongyang for its launch. Pyongyang says it should be allowed to launch satellites for peaceful purposes.

Both Koreas say their satellites are working properly. U.S. experts say Pyongyang's satellite is apparently malfunctioning.
